Thank you so much for sharing your story and insight with our readers. To kick things off, how did you get started?
We originally started as an in-house kickback. We’d have our friends gather for game nights/weekend gatherings, and we would cook food, mainly wings, for those who came. Everyone liked the wings so much we decided to take it a step further, so we put the wings together with something we thought would be easy and came up with the concept of a taco. After taking a long break, everyone continued asking when we were bringing the food back. After the pandemic, we began pushing the concept as a whole.

Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
Our biggest obstacle is the pop-up concept itself. We cook within the elements since we don’t have a designated building, which can be challenging.

We’re a pop-up food shop in the Lonsdale community in Knoxville, TN. We specialize in soulful southern fried wings and an exotic taco experience. We elevate the experience by incorporating layers of flavors that blend perfectly, which sets us apart. We also bring you two of your favorite foods under one roof. Tacos such as ours can’t be purchased anywhere else in Knoxville. We’re proud to say that we created our lane. Our hibachi taco is in a class of its own, making it one of our most popular menu items.

Where do you see things going in the next 5-10 years?
The food industry is forever changing, and we hope to be squarely in the mix with different concepts coming to the city. Our taste and style can stand the test of time, and we hope to grow as the industry and city allow us to.
