Inspiring Conversations with Emma Wright of The Spiffy Spud

Today we’d like to introduce you to Emma Wright.

Hi Emma, so excited to have you with us today. What can you tell us about your story?
My partner, Izaak, and I opened The Spiffy Spud food truck because we love spending time in the kitchen, participating in community events, and serving our friends and family. We specifically chose to do loaded fries because they are my favorite food! They pair well with several toppings and are mobile, making them good for outdoor eating and delicious! When we decided to buy a truck, Izaak contacted his friend Jason Andrews, owner of the Meatball Madness and More food truck. Jason surprised us by offering to sell us his truck immediately! With that offer on the table, we decided to move quickly to open our business. We spent a few months obtaining business licensure and insurance, wrapping and equipping the truck, and writing and testing recipes. We are lucky to have some amazing family and friends who were willing to come and try some of our trial dishes! We officially opened on February 25, 2023, and have been booked at food truck parks, neighborhoods, corporate offices, breweries, and festivals ever since!

We all face challenges, but looking back, would you describe it as a relatively smooth road?
Opening a business is rarely smooth, and opening a food truck is the same! We have faced several challenges, from finding financing, getting our truck wrapped, and replacing a broken fryer! Let me tell you; it is easier to run a fried food establishment with a working fryer! Luckily, these challenges led us to some amazing people who helped us problem-solve along the way. The food truck scene in Knoxville is very supportive, so we are thankful to have some new friends who can help us when we need a hand!

We’ve been impressed with The Spiffy Spud, but for folks who might need to be more familiar, what can you share about what you do and what sets you apart?
The Spiffy Spud serves loaded french fries, sweet potato fries, baked potatoes, and baked sweet potatoes topped with savory meats, melty cheeses, fresh veggies, and delicious sauces! We have vegetarian offerings, and we are 100% gluten-free! It is important to us to be able to serve all of our friends, even the ones with specific preferences or allergies. We strive to make our brand fun! With our cute cartoon potato logo plastered on the side of the truck, we want our customers to smile before they even make it up to the order window. We work all over, but we especially love serving at events that give back to our community, such as children’s events, pride festivals, schools, fundraisers, and nonprofits.
