

Today we’d like to introduce you to Heidi and Eric Davis.
Hi Heidi and Eric; please kick things off for us with an introduction to yourself and your story.
We moved to Austin, TX, in 2012 and were introduced to Summer Moon Coffee while living there. We fell in love with the unique oak-roasted coffee and famous sweet cream known as Moon Milk®. We never thought we could taste such fantastic coffee! Eric had a dream stir up in his heart to one day open a Summer Moon coffee shop. Years later, we reached out to the founders of Summer Moon and were given the green light to bring it to Tennessee. We prayed about pursuing this opportunity for a few months and believe the Lord gave us the go-ahead to open a Summer Moon here in the Knoxville area. We opened our first store on April 30th, 2022, in Farragut. Our greatest success so far has been building relationships within the community and growing the Summer Moon family.
Can you talk to us about the challenges and lessons you’ve learned along the way? Would you say it’s been easy or smooth in retrospect?
The road to any small business is challenging. We ran into some construction delays related to supply issues, but we were confident that God would make a way no matter the roadblocks we faced. We were grateful to work with professional contractors and architects who helped us through the process. We were privileged to work with contractors Jenkins & Stiles and the architecture firm Studio Four Designs.
What should we know about Summer Moon Coffee?
Appreciate you sharing that. What sets Summer Moon coffee shops apart is the unique oak-roasted coffee and signature sweet cream Moon Milk® — But more than that, it’s the Summer Moon spirit. It’s exceptional hospitality and cozy, welcoming spaces. We believe coffee brings us all together and is a vehicle for community. We’re a family-run business comprised of a diverse community of roasters, baristas, and coffee lovers. We all have a deep love for delivering high-quality, hand-roasted coffee and exceptional experiences to Summer Moon customers.
What do you think about risk?
Risk-taking is an exciting concept overall. For most people, it often implies that there might be a negative outcome or loss of something. We’ve instead chosen to live life a little differently. We trust and believe that whatever we do, things will be okay regardless of loss. You must plan and be diligent in your research to make wise decisions. Making decisions by being prayerful and educated on our choices has helped us take bigger risks. For instance, we opened a coffee shop after a pandemic, soaring construction costs, and a possible recession. Most people might see this as crazy or too risky and say we should store our assets and cling to whatever we have. You could ride it out. However, we believe we were called to open this business and that the absolute risk would have been not following through with it. The risk for us would be missing out on miracles, greater faith, and a community that has supported us so well. We think that both perceptions of risk are correct. We believe one can lead to fear and worry while the other will grow your faith for bigger and better things.
