Today we’d like to introduce you to Lindsey Carter.

Hi Lindsey, so excited to have you with us today. What can you tell us about your story?
It all started with a simple idea: I love helping people, and I wanted to find a way to do it every single day. Food became my language. There’s something magical about it — it’s immediate, it’s shared, it brings people together in a way that nothing else really can. I remember my first few events — nervous, juggling way too much — but seeing someone light up over a meal we made? That was it. That feeling hooked me.

Since then, it’s been a mix of trial and error, figuring out what really works, what matters, and how to keep all the rapidly moving parts in balance. It was terrifying at first — there’s a lot of pressure when you’re catering someone’s wedding day! Every catered lunch, every wedding, every corporate event is a chance to create a moment that matters. Over time, all those little moments added up into something bigger: a business that’s about more than food — it’s about connection, care, and making special events truly special, one plate at a time.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Honestly, it’s been anything but smooth — but we’ve learned so much along the way! I remember one wedding for 300 people. The prep, the timing, the logistics — it felt like everything that could go wrong almost did. When we arrived, we had to park in an incredibly tight spot. As we were decorating the food truck trailer with wedding décor, it started pouring rain. The outlet we were plugged into didn’t work, and we were stuck working in the dark! It was chaotic — but somehow, it all came together. Seeing the guests laughing, enjoying their meals, and genuinely having a great time made every bit of that chaos worth it.

Food truck catering has so many elements — figuring out which events turn a profit, calculating the right amount of food, coordinating timing — it can be overwhelming. But those moments of seeing people connect over a meal, the joy and relief when an event goes perfectly — that’s what keeps me going. Those are the moments that make all the struggles feel like nothing at all.

As you know, we’re big fans of A Wheely Good Food Truck. For our readers who might not be as familiar what can you tell them about the brand?
A Wheely Good Food Truck is based in Athens, Tennessee, but we spend most of our time catering events between Chattanooga, Knoxville, and all the towns in between. We specialize in food truck catering — weddings, corporate events, private parties, boxed lunches, and also offer drop-off catering when you just want great food delivered without the full-service experience.

We’re known for putting extra time and care into everything we make. Our lasagna, for example, takes three days from start to finish — slow-simmered sauce, baked twice — the whole nine yards. Guests don’t see all that effort, but they definitely taste it. That same attention to detail runs through everything we do, whether it’s BBQ chicken that’s been marinating overnight or a loaded baked potato that hits every note just right.

But there’s more to what we’re known for than just great food. We’re honest and upfront with every client. We won’t take an event if we know we can’t meet the expectations of the coordinator. We say what we mean and mean what we say. We follow through. We give you all the information you need to make an educated decision — because the truth is, most people don’t realize you can’t serve a made-to-order, restaurant-quality meal in two seconds flat. What sort of changes are you expecting over the next 5-10 years?
Over the next 5–10 years, I see food trucks and catering continuing to grow and adapt, but the heart of it will stay the same: people want real connections and great food. Sustainability is becoming more important — guests care about where their food comes from and how it’s made — and that’s a shift I love seeing. Technology will make some things smoother behind the scenes, but no app or gadget can replace showing up on time, staying calm under pressure, and serving food that people actually enjoy.

At the same time, expectations are rising. Guests are curious, adventurous, and want an experience that feels personal. That’s where we focus: creating moments that matter, not just meals. Trends will come and go, but care, consistency, and doing food the right way will always be what separates a memorable event from an ordinary one.
