

Today we’d like to introduce you to Courtney and Lindsey Norton
Courtney and Lindsey, we appreciate you taking the time to share your story with us today. Where does your story begin?
What started as a baking hobby for stress relief slowly but surely started to grow into more. Lindsey( the Baker) would send lots of baked goods to work with Courtney ( the stress haha) to get them out of the kitchen. Initially Courtney’s coworkers would ask “what did you do now to stress her out?” That quickly turned into “can you go home and stress your wife out” followed by some cash in hopes for some baked goods to appear. We became a husband and wife team along with our daughter who also loved to bake to create some fun off the wall cookie/ dessert creations!
Courtney’s entrepreneurial spirit and his love for the podcast “Side Hustle School” coupled with Lindsey’s love for baking soon led to the creation of Nookies Cookie Co. Lindsey was not thrilled with this endeavor at first because it was far out of her comfort zone but 5 years in August baking from home later the whole family has grown to love this business that they have created together.
Nookie’s Cookie Co was intended to be a part time endeavor to complement their full time jobs but quickly turned into more. As of May 10 2024 they opened their “Nookies Cookie Co Cookie Studio on the Square” and have enjoyed getting to see their loyal customers and new faces each weekend!
Nookie’s Cookie Co favorite part of their business is being able to use their small space in the community to serve God by helping make the community a “sweeter” place by helping out whenever they can!
Fun Fact- Nookies the name comes from our last name NORTON+COOKIES=NOOKIES

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Not always smooth. Lots of obstacles come with being a cottage bakery. Space is a huge issue and still is a major problem. We bake from home on a double oven and 5 mixers and this just doesn’t cut it for the amount of orders and dough we do. Our home kitchen looks like a bakery in the dining room with all the equipment always being set up and the ingredient carts. Our third bedroom has been converted to the pantry/ supply room for all things Nookies related. We have a very large freezer in the third bedroom. As well as an extra fridge and small freezer. We have a deep freezer as well that we use for extra space when needed in our garage. We are usually busting at the seams! We are always struggling to know what the next step with this business is and have been blessed to have our new space as a small stepping stone out of our home and into the community.
The juggling of full time jobs, family and a fairly large small business if always a struggle but we try and look at all struggles as a growth moment and find the blessing regardless.
Can you tell our readers more about what you do and what you think sets you apart from others?
Courtney is an Engineer by day and Lindsey is a Buyer.
As far as our cookie company goes we strive to make delicious creative fresh homemade goodies. We have a love for food and treats and love to get creative. We specialize in gourmet cookies that are full of flavor. We put flavor throughout the entire cookie so you get a great bite every time. We are constantly coming up with flavor combos to try and have created well over 250 combos at this point.
We are known for our Banana Pudding cookies, cookie cakes, cinnamon rolls, no bake cookies and our unique dessert bars!
We are set apart from others because we aren’t afraid to combine flavors and see what happens, we are always making sure that the flavor is in every bite and not just on top of the cookie.
We are most proud of being able to give back to the community with or business. It makes us feel like we have a purpose and love to see our customers come together with us to help out.
What was your favorite childhood memory?
Oddly enough no memories of baking with family other than my mom always making homemade banana pudding fresh for people if they came over for dinner. Family vacations have always been something I have cherished.
