Hi Connie, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstories with our readers?
Nacho Bisnez was just a dream for years. It was a concept of delivering great authentic Mexican food without the Americanising it. My family has been my backbone in this adventure.
My husband Moises and Dario Melgar my adoptive son. These two men have helped grow this business and been my hardest critics. Today, we have learned giving back to the community is what makes us thrive. We have been blessed to meet many people with great hearts on our journey. Our food is based on Mayan recipes in the Yucatan.
Our main seller is Cochinita which is a slow cooker with sweet pork. Our menu focus is on some of the favorite foods that Mexico has to offer. Like Tacos. Nachos. Quesadilla. Burrito Bowls. Walking Tacos and Street corn just to name a few.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Starting a business during covid people said I was crazy. I felt the need to do this at this time because so many people not being able to leave their homes to go out to eat.
While struggling to come up and build Nacho Bisnez we also were git with bad news of my son’s daughter had cancer. Being four years old and going through this made us work harder.
Watching her being strong has made us not give up. So juggling Nacho Bisnez and this life event has been a blessing.

I am the creator of Nacho Bisnez.
We specialize in Cochinita (sweet pork) from the Yucatan Mexico it’s a Mayan recipe. I am proud to have learned this special recipe from this area in Mexico. I think Nacho Bisnez is set apart because we involve ourselves with community projects.
Nacho Bisnez does fundraisers and partners with schools. Cancer events. Children’s Hospital. Small businesses, etc. In the hope to help our community to grow.
Are there any apps, books, podcasts, blogs, or other resources you think our readers should check out?
We use some social media to further our business.
We have Facebook. Instagram. And Tiktok. Have fun showcasing the locations where we go and do events to help them bring in clientele. My favorite thing to do is cook and experiment with recipes I get from others in Mexico.
